Dream Cake

Bottom:

1 cup flour

½ cup butter or margarine

Top:

2 eggs beaten

1 cup brown sugar

1 cup walnuts

1 cup coconut

2 tblsp flour

½ tsp baking powder

pinch salt

1 tsp vanilla

Cook bottom for 15 minutes.

Add topping and bake for another 15 to 20 minutes at 350F

Blueberry Buckle

Cream well:

½ cup shortening

½ cup white sugar

1 egg

Sift together:

1 ½ cups of flour

¼ tsp salt

Add to creamed mixture alternating with ½ cup milk.

Into a greased 9 x 9 pan put a layer of blueberries, cover with batter, then cover with another layer of blueberries.

Topping:

1 cup brown sugar

½ cup flour

½ tsp cinnamon

½ cup butter

Mix until crumbly and sprinkle over berries.

Bake at 350 degrees F for 1 ¼ hours

Banana Wheatgerm Bread

Dry Ingredients

2 cups sifted flour

1 cup sugar

1 tsp baking soda

1 tsp salt

½ cup wheatgerm

Wet Ingredients

2 eggs

1/3 cup cooking oil

1/3 cup milk

1 tsp vanilla

2 cups sliced bananas (large)

½ cup walnuts (optional)

Combine first 4 ingredients; sift into mixing bowl. Stir in wheatgerm. Puree eggs, oil, milk, vanilla and ½ of the banana pieces until smooth, about 10 seconds. Add remaining pieces; puree until smooth about 15 seconds. Add nuts halves; puree until nuts are coarsely chopped, about 10 seconds. Pour over dry ingredients and mix until dry ingredients are moistened. Pour into 9 x 5 x 3 inch loaf pan. Bake at 350F until done approx. 60 to 70 minutes until toothpick comes out clean. Cool in pan for 5 minutes. Remove from pan and finish cooling on rack.

Secret Ingredient Chocolate Fudge Cake

1 ¾ cups of flour

¾ cup cocoa

1 tsp baking powder

2 eggs

1 cup cola

1 tsp vanilla

2 cups brown sugar

2 tsps baking soda

pinch salt

½ cup vegetable oil

1 cup buttermilk

Preheat oven to 350F.  Lightly grease and flour a 9 x 13 inch baking pan.  Sift together dry ingredients and place in a large bowl.  Into the centre stir remaining ingredients with a whisk to make a smooth thin batter.  Whisk for about 3 minutes.  Pour into pan and bake until cake tests done about 40 – 45 minutes.  Cool cake on counter or refrigerate while preparing icing.

Icing

¼ cup margarine

1/3 cup cola

3 tblsps cocoa

4 cups icing sugar

Combine margarine, cocoa, cola and icing sugar and mix slowly to combine ingredients.  Whip or beat until fluffy and smooth.  Frost Cake.

To make buttermilk take approximately 1 cup of milk and add vinegar to sour milk…it works perfectly.
